1lb Cod

2 cups shredded cabbage
1 tomato diced
1 avocado smashed into guac
8 corn tortilla’s
Habanero pineapple sauce

Serves 4

Cook the cod in a skillet until it begins to flake (salt and pepper to taste). Fill the corn tortilla’s with cheese, cod, guacamole, tomatoes, cabbage and Habanero pineapple sauce and enjoy.

Habanero Pineapple Sauce

8 oz of Fage plain greek yogurt
1/2 yellow onion
3 habaneros
5 slices of pineapple

In a skillet sauté the onion, habaneros and pineapple until the onions are translucent. In a blender add the Fage yogurt, the sautéed onions, habaneros and pineapple. Blend until smooth. Put the sauce into a bowl and refrigerate for an hour before serving.
