Great recipe that my wife introduced me too, and then I hijacked. Great way to start your day. I have modified this recipe to have two serving portions.

6 egg whites
4 slices of Natural Choice oven roasted turkey or ham
1/4 cup finally chopped yellow onion
1/2 jalapeno finely chopped
2 tbs shredded cheddar cheese

Preheat oven to 350 degrees. Mix egg whites, onion, jalapeno and cheese in a mixing bowl. Using a muffin tin, use 1 slice of Turkey as your muffin cup. So the turkey becomes your muffin cup and crust all in one. Fill each of the muffin cups about 3/4 full. Cook for 20 minutes or until done.
