1 large sweet potato
3 large carrots
1 medium yellow onion
2 cloves of garlic
2 mozzarella cheese sticks
Peel sweet potato and carrots and cut into 1” chunks. Boil until soft, drain, pat dry and then set aside (let cool).
Finely chop onion and garlic. In a skillet, add 1 tsp olive oil and saute onion and garlic until they are golden brown. Add onion and garlic to sweet potatoes and carrots – smash until smooth.
Preheat oven to 425. Lightly cover cookie sheet with olive oil.
Cut mozzarella cheese sticks into three equal pieces. Take a ball of sweet potato mixture and flatten in the palm of your hand. Place cheese on top and wrap the sweet potato around the cheese.
Place in oven for 20 to 30 minutes or until sweet potato begins to brown.
