avocadoEggs in Avocado Halves

I’ve been meaning to try this for a while and was pleasantly surprised. Kept this version pretty simple and did not experiment to much. Great thing is it is extremely easy to make as well.

1 Avocado – Haas
2 eggs
Sprinkle of cheese

Preheat oven to 450. Cut avocado in half and remove the pit. Make the hole from the pit larger by removing an additional table spoon of avocado. Add a little bit of cheese to the avocado, salt and pepper to taste, than very carefully fill the avocado with one whole egg. Put the avocados in an oven safe dish (I added foil to the dish to prevent the avocados from tipping), cook for 20 minutes or until the whites have solidified.
