Layer the bottom of the slow cooker with 8oz of broccoli slaw, sliced shiitake mushrooms, garlic and ginger. Add chicken and top with hoisin and rice vinegar. Cook on low for 2 hours and shred chicken, place back in slow cooker for another 90 minutes to 2 hours. Serve on large Bibb leafs. use the remainder of the hoisin sauce for dipping.
