Happy thanksgiving. Kind-a-sorta healthy sweet potatoe pie. Cut out the condensed milk at least. 

1 1/2lbs cooked sweet potatoes

1 1/4 cup brown sugar

1/2 teaspoon nutmeg

1 teaspoon cinnamon

1 stick butter

1 Tbs vanilla extract

1 teaspoon bourbon

2 eggs

2 9″ pie crusts

Juice from 1/2 lemon

Cream butter sugar, spices and eggs and add bourbon and vanilla extract. Cut the sweet potatoes into inch cubes and boils until tender. Remove from water and smash until smooth. Add butter mixture and mix until smooth. Pour into pie crusts. Bake at 425 for 40 minutes.
