shrimp_stew

Serves 6

1 cup chopped brussel sprouts
1 cup diced yellow onion
1 chopped yellow bell pepper
3 chopped garlic cloves
1 15oz can Rotel tomatoes and green chiles
1 can kidney beans (drained)
1/2lb turkey sausage
1lb medium shrimp (shelled and deveined)
1 cup chicken broth
2 tbs all purpose flour

3 cups of cooked brown rice


Preheat large skillet to medium high heat and add 2tbs of olive oil, brussel sprouts, onion, bell pepper and garlic. Sauté until onions are translucent. Add Rotel, kidney beans, turkey sausage, shrimp and 3/4 cup of chicken broth. Lower heat to medium, cover and simmer until shrimp are fully cooked. With the remaining chicken broth, whisk in 2 tbs of flour and add to skillet when the shrimp are done. Cover and simmer for an additional 2 minutes before serving.


Serving Size: 1/2 cup brown rice and 1 cup stew.
