Ran out of time this weekend to prep my lunches for the week so I had to scrounge through the refrigerator this morning to try to come up with something for lunch. I was able to locate some carrots, 1/2 cup of brown rice, about 4oz leftover chicken, some onion, an egg, garlic and basil paste. Yummy.
Ten minutes later, it was transformed into a nice fried rice.
A little high in calories and carbs, but you have to eat lunch.
