2lbs Pork Country style ribs – boneless
15 oz Hatch red enchilada sauce
1 Medium yellow onion – chopped
4.5 oz Chopped green chiles
1 Tbs ground chili powder
2 tsp Cumin
2 tsp Garam Marsala


Toss it all into a slow cooker, set on low for 6 hours. Shred pork and serve with corn tortillas, avocado, and tomato.


Serving Size: 2 corn tortillas (I prefer Tortilla Lands, uncooked corn tortillas)
5 oz shredded pork
1 Tbs of shredded cheese
1/8 tomato
1/8 avocado
