I’m still under the weather but trying to keep on track. Simple breakfast this morning.
3 egg whites
1/4 cup sweet potato thinly sliced
1 Johnsonville turkey breakfast sausage
1/2 habanero finely chopped
1/2 brown rice tortilla
3 Tbs fresh guacamole
Over medium high heat saute sweet potato until tender. Add habanero and diced turkey sausage and continue cooking until desired hash brown consistency is achieved. Stir in egg whites and scramble. While you are cooking the sweet potato hash browns, cook the brown rice tortilla in the microwave for 90 seconds and let cool. Once it cools it will be more like a corn chip. Serve with guacamole.
