So my meal prep ended short this week and needed to cook a lot of chicken quickly but it was already late at night. So what to do?

I had 2 lbs of chicken thighs and a bottle of jalepeno verde. That’ll do.

Dumped it in the crock pot on low and went to bed. 5 hours later, perfectly cooked flavorful chicken for some meal preps.

Prepped meal:

6 oz chicken
130g black beans
3 oz carrots
