Was on a plane from 3:30am to 9:00pm yesterday. So, didn’t really get a chance to workout. but found a recipe I haven’t posted yet.

shrimpServes 2:

1 lb of shrimp (20 shrimp)
1 large zucchini
2 garlic cloves minced
5 sun-dried tomatoes in oil (chopped)
1 tbs crushed chili peppers

Preheat oven to 350. Peel and devein shrimp and set aside. Make noodles out of the large zucchini. There are a lot of expensive devices out there that will do this or you can get one for $10 at target. Divide the noodles onto two plates. In a heated skillet, add the sun-dried tomatoes, and garlic and sauté for 3 minutes. Add shrimp and crushed red pepper, mix well and place skillet into the oven for 10 minutes. Remove from oven and serve on top of the zucchini noodles.
